Equipment

  • Jars or small lidded containers

Instructions

  1. In a medium bowl or a large jar, stir together the oats, chia seeds and salt. Add the plant milk, maple syrup and vanilla and stir until no dry pockets remain.

  2. Let the mixture sit for 5 minutes, then stir again. Chia seeds clump together as they start to swell, and this second stir breaks the clumps up.

  3. Spoon into jars or containers, cover and refrigerate for at least 4 hours, or overnight, until the oats are soft and the mixture is thick and spoonable.

  4. Stir before serving and loosen with a splash of plant milk if it is thicker than you like. Top with the berries or banana and eat cold.

Notes

  • The oats keep covered in the fridge for up to 4 days, so a bigger batch covers several breakfasts. Add the fruit on the day you eat them.
  • Quick oats turn mushy and steel-cut oats stay hard after soaking, so use rolled (old-fashioned) oats.
  • To eat it warm, microwave a portion in a heat-safe bowl for 1 minute, stirring halfway.
  • Dairy milk works in place of plant milk, though the oats are then no longer vegan.
