Equipment

- Instant-read thermometer
Instructions
Heat the oven to 425°F with a rack in the middle. Pile the green beans on a large rimmed sheet pan, toss them with 1 tbsp (15 mL) of the oil and half the salt and pepper, and spread them out.
Once the oven is hot, roast the beans on their own to give them a head start, until they begin to soften and brown in a few spots, 8 minutes.
While the beans roast, stir together the mustard, garlic, lemon zest, the rest of the oil and the rest of the salt and pepper. Pat the salmon dry with paper towels.
Push the beans to the edges of the pan. Lay the salmon in the middle, skin side down if it has skin, and spread the mustard mixture over the tops of the fillets.
Roast until the salmon flakes easily with a fork and the thickest part reads 145°F, 10–14 minutes. The beans should be tender and blistered.Roast until the salmon flakes easily with a fork and the thickest part reads 63°C, 10–14 minutes. The beans should be tender and blistered.
Squeeze a couple of lemon wedges over the salmon and beans, scatter with the dill and serve with the remaining wedges.
Notes
- 145°F is the USDA safe temperature for fish. Some cooks take salmon out around 125°F for a softer, more translucent center, but the USDA figure is the safe one.63°C is the USDA safe temperature for fish. Some cooks take salmon out around 52°C for a softer, more translucent center, but the USDA figure is the safe one.
- Thin fillets and tail pieces cook faster. Start checking them 7 minutes after they go into the oven.
- Thin French green beans (haricots verts) can go in with the salmon from the start; they don't need the head start.
- Refrigerate leftovers within 2 hours and eat within 3 days. Cold leftover salmon is good flaked over a salad.
