Stir the sauce ingredients together with 2 tbsp (30 mL) water in a small bowl.

  2. Heat the oil in the wok over medium heat. Add the chiles and Sichuan pepper and stir until the chiles darken and smell toasty, 30 seconds. Don’t let them blacken.

  3. Turn the heat to high, add the chicken and spread it out. Sear for 1 minute, then stir-fry until no longer pink outside, 2–3 minutes.

  4. Add the garlic, ginger and scallions and stir-fry for 1 minute.

  5. Stir the sauce, pour it in and toss until it thickens and coats the chicken and the chicken is cooked through, 1–2 minutes. Toss in the peanuts and serve with rice.

Notes

  • The dried chiles flavor the oil; most people don’t eat them.
  • Sichuan peppercorns give a gentle tingling numbness; leave them out for a milder dish.
