Heating the pan with the oven means the potatoes start browning the moment they touch it.

  2. Pat the potato chunks very dry with a clean towel; water left on the surface turns to steam and keeps the outsides soft. Toss them in a large bowl with the oil, salt and pepper until every piece is coated.

  3. Using oven mitts, take out the hot pan and tip the potatoes onto it; they will sizzle. Spread them in a single layer, cut sides down, with a little space between pieces. Crowded potatoes steam instead of crisping.

  4. Roast without stirring until the undersides are deep golden and release easily from the pan, 20–25 minutes.

  5. Flip the potatoes with a thin metal spatula and sprinkle with the garlic powder and rosemary. Roast until crisp all over and tender when pierced with a knife, 15–20 minutes. Taste and add a pinch more salt if needed.

Notes

  • If the potatoes stick when you try to flip them, give them 3–5 minutes more. They let go once a crust has formed.
  • Russet potatoes work too. They come out fluffier inside but break up more easily when you flip them.
  • Leftovers keep in the fridge for up to 4 days. Reheat them on a sheet pan in a 425°F oven for 10 minutes to bring back the crunch; the microwave makes them soft.Leftovers keep in the fridge for up to 4 days.
