Instructions

  1. Heat the oil in the skillet over medium-high heat. Brown the beef and pork with the onion, breaking up the meat, 8–10 minutes. Add the garlic for 1 minute, then the crushed tomatoes, tomato sauce, oregano and salt. Simmer for 20 minutes.

  2. Meanwhile cook the noodles in a big pot of salted boiling water until just flexible, about 2 minutes short of the package time. Drain and lay them flat on oiled foil so they don’t stick. 3. Mix the ricotta, egg, half the Parmesan and the parsley.

  4. Spread a cup of meat sauce in the dish. Layer 3 or 4 noodles, a third of the ricotta, a quarter of the sauce and a quarter of the mozzarella. Repeat twice, then finish with noodles, the rest of the sauce, mozzarella and Parmesan.

  5. Cover with foil (tented so it doesn’t touch the cheese) and bake for 25 minutes. Uncover and bake until bubbling and golden, 20–25 minutes.

  6. Let the lasagna rest for at least 20 minutes before cutting, or it will slide apart.

Notes

  • Assemble up to a day ahead and refrigerate, covered. Add 15 minutes to the covered baking time.
  • Freeze unbaked or baked for up to 3 months; thaw overnight in the fridge before baking.
