Ingredients
A large baking sheet holds about 12 cookies, so more cookies just means more rounds. The bake time per sheet stays the same.
Equipment
- 2 large baking sheets
- Parchment paper
- Electric mixer
Instructions
Heat the oven to 375°F with a rack in the middle. Line two baking sheets with parchment paper. In a large bowl, beat the butter, brown sugar and granulated sugar with an electric mixer on medium speed until lighter in color and fluffy, 2–3 minutes.
Beat in the eggs one at a time, then the vanilla, scraping down the sides of the bowl as needed. The mixture should look smooth, not curdled.
Add the flour mixture and mix on low speed just until no streaks of flour remain. Stir in the chocolate chips with a spatula.

Bake one sheet at a time until the edges are golden but the centers still look pale and a little soft, 10–12 minutes. The centers firm up as the cookies cool.
Let the cookies cool on the sheet for 5 minutes, then move them to a wire rack. Bake the remaining dough on a cool sheet; a hot sheet makes the cookies spread too much.
Notes
- For thicker cookies with a deeper caramel flavor, cover and chill the scooped dough for at least 1 hour or up to 3 days. Bake straight from the fridge, adding 1–2 minutes.
- To freeze, set scooped dough balls on a tray until firm, then keep them in a freezer bag for up to 3 months. Bake from frozen, adding 2–3 minutes.
- If the butter is greasy or starting to melt, the cookies will spread thin. Chill the dough for 30 minutes before scooping.
- Store cooled cookies in an airtight container at room temperature for up to 5 days.
