  2. In a large bowl, toss the apple slices with the lemon juice, then with the sugar, cinnamon and cornstarch until evenly coated. Spread them in the baking dish.

  3. In another bowl, mix the flour, oats, brown sugar, cinnamon and salt. Pour in the melted butter and stir with a fork until everything is moist and forms small clumps.

  4. Scatter the topping evenly over the apples, squeezing some of it into larger clumps as you go.

  5. Bake until the topping is deep golden and the juices bubble thickly around the edges, 40–45 minutes. If the topping browns before the juices bubble, lay a sheet of foil loosely over the dish.

  6. Let the crisp cool for 15 minutes so the juices thicken. Serve warm, with a scoop of ice cream if you like.

Notes

  • Good baking apples hold their shape: Granny Smith and Honeycrisp are a reliable pair.
  • Make ahead: mix the topping and refrigerate it in a covered container for up to 3 days, then assemble and bake.
  • Leftovers keep, covered, in the fridge for up to 4 days. Rewarm in a 350°F for about 15 minutes to re-crisp the top.Leftovers keep, covered, in the fridge for up to 4 days. Rewarm in a 175°C for about 15 minutes to re-crisp the top.
