Instructions

  1. Toss the chicken with the salt and pepper. Crumble the cold rice with your fingers so the grains are separate; clumps are hard to break up once they hit the hot pan.

  2. Heat 1 tbsp of the oil in the skillet over medium-high heat until it shimmers. Add the chicken in a single layer and cook, stirring now and then, until browned with no pink inside, 5–6 minutes. A piece should read 165°F. Move it to a plate.Heat 1 tbsp (15 mL) of the oil in the skillet over medium-high heat until it shimmers. Add the chicken in a single layer and cook, stirring now and then, until browned with no pink inside, 5–6 minutes. A piece should read 74°C. Move it to a plate.

  3. Lower the heat to medium. Pour the eggs into the fat left in the pan and stir gently until softly set but still a little glossy, about 1 minute. Add them to the plate with the chicken.

  4. Turn the heat back to medium-high and add 1 tbsp of the oil. Stir-fry the onion and the white parts of the green onions until the onion softens, 3 minutes. Stir-fry the onion and the white parts of the green onions until the onion softens, 3 minutes. Add the garlic and stir until fragrant, 30 seconds.

  5. Add the rest of the oil, then the rice. Press it into an even layer and leave it until it sizzles and some grains start to crisp, 1–2 minutes. Stir, spread it out again and keep going until the rice is hot all the way through, 3–4 minutes.

  6. Stir in the peas and carrots, then return the chicken and eggs, breaking the eggs into small pieces. Drizzle the soy sauce around the edge of the pan and toss until the rice is evenly colored and the vegetables are hot, 2–3 minutes.

  7. Take the pan off the heat. Drizzle with the sesame oil, scatter the green onion tops over and toss once more. Taste and add a splash more soy sauce if it needs it.

Notes

  • Freshly cooked rice turns gummy in the pan. If it is all you have, spread it on a sheet pan and refrigerate it uncovered for 30 minutes to dry the surface first.
  • About 1⅓ cups of uncooked long-grain rice cooks up to the 4 cups used here.About 315 mL of uncooked long-grain rice cooks up to the 946 mL used here.
  • Chicken breast works the same way and cooks a minute or two faster.
  • Refrigerate leftovers within 2 hours of cooking and eat within 3 days. Reheat until steaming hot all the way through.
