Ingredients
A 12-inch skillet fits this amount. Crowd it and the potatoes steam instead of crisping, so cook bigger batches in two pans.
Equipment
- 12-inch cast-iron or nonstick skillet with a lid30 cm cast-iron or nonstick skillet with a lid
Instructions
Put the potatoes in a microwave-safe bowl with a splash of water, cover and microwave until just tender, 5 minutes. Drain and pat dry. This head start makes them crisp faster.
Heat the oil in the skillet over medium-high heat. Add the potatoes in an even layer with the salt and leave them alone until browned underneath, 5–6 minutes. Turn and brown again, 5 minutes.
Add the onion, bell pepper, paprika and garlic powder and cook, turning every couple of minutes, until the vegetables are soft and the potatoes crisp, 8–10 minutes.
Lower the heat to medium-low, make four wells in the hash and crack an egg into each. Season the eggs with pepper, cover the pan and cook until the whites are set and the yolks still soft, 4–6 minutes.
Scatter with green onions and serve from the pan.
Notes
- No microwave? Boil the potato cubes for 5 minutes and drain well before frying.
- For a meaty hash, brown 8 oz breakfast sausage in the pan first, then cook the potatoes in its fat.
