Ingredients
Equipment
- Medium saucepan
- Six small glasses or ramekins
Instructions
Pour the milk into the saucepan and sprinkle the gelatin evenly over it. Leave it to soften for 5 minutes.
Set the pan over low heat and stir until the gelatin dissolves completely, 1–2 minutes. Don’t let it boil.
Stir in the cream, sugar and salt and warm, stirring, until the sugar dissolves and the mixture is steaming. Take off the heat and stir in the vanilla.
Pour into the glasses and chill until set with a gentle wobble, at least 4 hours.
For the sauce, mash half the berries with the sugar and lemon juice, then stir in the rest. Spoon over the panna cotta to serve.
Notes
- Gelatin is made from animal collagen, so this isn’t vegetarian. Agar-agar can replace it; follow the package, as it must be boiled to set.
- Keeps 3 days covered in the fridge.
